Billy Gibney Expands Culinary Offerings With Eat At Billy’s, A Sandwich Shop Next To His Popular Rosalie Butcher Shop

Billy Gibney, well-known in Brisbane for his expertise in meat, owns the popular Meat at Billy’s butcher stores in Ashgrove and Rosalie. Now, meat-lovers in Rosalie will have a new place to go for delicious sangas, with the opening of Eat at Billy’s, a sandwich place right next door to the Rosalie butcher shop.

Billy’s shops are known for providing top-quality wagyu, free-range, ethically-sourced chicken, and pork from award-winning local farms. At the Eat at Billy’s sandwich shop, Mr Gibney offers delicious sandwiches with a focus on quality meat and simplicity.

Mr Gibney’s years of experience in the meat industry have allowed him to source the best ingredients and create sandwiches that are both delicious and satisfying.

The menu is limited to only four sandwiches: a fried chicken option, a reuben-inspired creation, a stellar steak sanga, and a roast pork variant. So far, the most popular one is the “Not A F*$&en Rueben” sandwich, which is wood-smoked wagyu brisket pastrami served with red cheddar, pickles, and signature sauce.
